Reese's Peanut Butter Cup Stuffed (Gluten-Free) Pie Crust Bites

Reese's. Pie Crust. Bite-size. And they can be gluten-free. Yep, that just happened.

Ever heard the saying "when life hands you lemons, make lemonade?" - this is "when you forget to bring gluten-free pie crusts home for Thanksgiving and need to use them up, make pie crust bites!"

I had no less than six gluten-free pie crusts from Whole Foods in a very full freezer so it was time to invent something delicious with leftover Christmas candy. So was born:

Reese's Peanut Butter Cup Stuffed  (Gluten-Free) Pie Crust Bites

One standard size crust makes 10 bites.

Ingredients:

  • One standard frozen pie crust (ours was a Gluten-free Pie Crust from Whole Foods)
  • 10 unwrapped Reese's Peanut Butter cups (fun-size)

Directions:

1. Let your pie crust thaw to room temperature. Spread a bit of a flour (or gluten-free flour) on your counter and roll the dough into a ball. Use a rolling pin to flatten it (or a can of Pam, which I used instead!) to about 1/4" thickness.

2. Place an unwrapped Reese's top down on the crust. Use a knife to cut a square around it (see photo below for size of square).

3. Pinch the dough in the square around the Reese's, covering it completely. Repeat 10 times or so, reforming the ball and flattening as needed.

4. Place on oil-sprayed foil on a non-stick cookie sheet and bake at 325F for about 10-15 minutes or until golden brown. Serve immediately.

No joke, these things taste like fried Reese's from the fair but they are healthier (?) kind of - since they are baked and not fried. You're welcome.

Don't like Reese's? Sad, but ok, would probably also work with another favorite chocolate candy of choice. Enjoy inventing your own creative pie crust bites!
